Cooking Class: Handmade Chocolates

Students are required to present proof of COVID-19 vaccination + valid ID at the start of class (please plan to arrive early accordingly). Failure to do so will result in a cancellation of ticket, and a refund or store credit will not be issued. Examples of valid proof of COVID-19 vaccinations are: vaccination record card, digital or physical WA state certificate of vaccination from MyIRmobile.com, or a verified electronic medical record printout from a medical provider. Students will also be required to wear masks during the non-eating portions of class.
Chocolate may be the universal language for Valentine’s Day. In this fun and informational class, pastry chef and author Laurie Pfalzer will teach you how to make hand-rolled chocolate truffles and chocolate bark for gifting to your favorite someone. Learn to make silky, smooth ganache for two flavors of truffles – Dark Chocolate Raspberry Rose and Milk Chocolate Fresh Mint – and how to finish with simple cocoa powder and tempered chocolate. Students will also try their hand at tempering white chocolate using the seeding method, and create a Tropical White Chocolate Bark with dried papaya, pineapple, and toasted coconut.
Laurie will discuss different types and brands of chocolate, the science behind tempering chocolate and making ganache, and how to troubleshoot problems.
Class is hands-on and limited to 12 people. Each student will leave class with one dozen boxed truffles and a bag of chocolate bark. Dinner is not included. Please note that event registration is non-refundable.
